Matteo Zamboni, patron and driving force of Civico 47 in Paddington, Sydney, of Italian origin has refined his passion for hospitality and the culinary world over the years.
He boasts experiences at starred restaurants both in Rome and Milan, moving on to experiences in Tokyo where he absorbed Japanese cuisine techniques. Until arriving in Australia, where he has been based for about fifteen years and where he has quickly established himself as one of the most important Italian chefs in the nation.
